With starters, soups, main courses and desserts, along with notes on health, sustainability and heritage, we hope you will enjoy the journey through the cuisines of Greece, Lithuania, Spain and the UK. Some recipes are presented exactly as prepared traditionally over centuries, while others have been adapted to fit in with awareness of what a healthy and sustainable diet means, such as by substituting alternatives for meat and/or dairy ingredients.
We hope you find the recipes fruitful for your cooking. Perhaps the book will inspire you to look more closely at your own culinary traditions, those of your ancestors or places you have lived. We wish you a fun and environmentally friendly cooking journey.
